A midweek gathering of family, friends and staff before the dinner rush gave Monarca’s the opportunity to show off a new side of the restaurant in Rockmart.

The Polk County Chamber of Commerce gathered with city officials and those who helped make it happen for a ribbon cutting ceremony officially opening up the expansion of the dining room at Monarca’s.

Monarca’s expansion allows for large parties to have space to spread out – a party of 45 was already planned following the late Wednesday afternoon ribbon cutting ceremony – and allow for other opportunities to draw in customers.

Plans include expanding karaoke, starting a trivia and bingo night, and other opportunities in the new space.

Vanessa Ramirez Betancourt and her brother Jorge Ramirez opened the restaurant together as a family business in 2022, and have grown in the process enough to take on more of the space in the Sycamore Grove complex behind Triangle Foods.
